Orla McAndrew's sausage, leek and apple tart: Today
Ingredients
1 x shop-bought puff pastry sheet
1 leek sliced and washed
30g butter
1 red apple
1 red onion
1 tsp wholegrain mustard
1 tsp honey
1 tbsp olive oil
4 Butchers sausages
Salt and pepper
1 egg beaten, to glaze.
Method
Slice and wash the leek.
Heat the butter in a wide bottomed pan until it begins to foam. Add the leeks to the butter and gently sweat for about 10 minutes. Season with salt and pepper.
Meanwhile, slice the onion and apple into 1"slices and place in a mixing bowl. Using a kitchen scissors, chop the sausages into chunks and add this to the bowl. Add the honey, mustard, and olive oil and stir everything together.
Place the pastry on a parchment lined baking tray and brush the edges with beaten egg.
When the leeks are softened, place them on the pastry and scatter everything else on top.
