Lina Gautam's chicken and courgette curry: Today
A delightful and nutritious dish.
Ingredients
Serves 4
- 2-3 large chicken breasts cut in to pieces
- 4 medium courgettes grated
- 1 onion finely chopped
- 1 medium tomato finely chopped
- 2 cloves garlic grated
- 1 tbsp ginger grated
- 3 tbsp rapeseed or vegetable oil
- 1 tsp turmeric powder
- Small knob of butter
- 1 tsp salt or to your taste
Method
Preparation of spice mix:
- Mix cumin, fennel, mustard, onion/nigella and fenugreek seeds in a pestle and mortar with chilli powder to your taste and roughly grind it.
- Heat the oil in a skillet over medium heat. Add the chicken pieces with turmeric powder and cook until they are golden brown.
- Add onion to the chicken pieces and cook until they become soft.
- Now add salt, grated garlic, ginger with tomato and cook for a minute
- Add grated courgette and butter, stir and cook until courgette become soft
- Now add ground spice mix, stir, cover and cook for a minute or so
Serving
- Serve hot with fluffy basmati rice or naan bread and enjoy!
